HOMEMADE SUGAR COOKIES - HAPPY DAY OF LOVE
Many years ago when we lived in the Midwest for my husband’s schooling...and were far away from any of the western states we once called home, I became fast friends with a few women that were also temporary transplants. They became my tribe. We stepped in and supported...we laughed together and confided in one another. Each month we would take turns hosting a girl’s luncheon and then we would spend the rest of the afternoon chatting with our babes in arms and toddlers playing underfoot.
When our years in the Midwest came to a close, together we compiled a cookbook of our favored recipes as a token of our friendship. To this day some of my long time favorites come from the tattered, worn-out pages of the friendship cookbook, including this sugar cookie recipe. I’ve made them countless times over the years, changing and perfecting the recipe along the way, but even with the changes they still remind me of my sweet friends. Here’s to friendship & love! SUGAR COOKIE RECIPE
1 c softened butter
1 1/4 c sugar
1 t vanilla
Mix in dry ingredients:
3/4 t baking soda
3/4 t salt
2 c flour
Divide in half, make into two 2" rolls then wrap carefully in plastic wrap. Chill, or put in freezer. Slice off 1/4" thick and then bake on greased cookie sheet at 350 degrees for 8-10 minutes.
Sprinkle sugar or cinnamon on top, half way through baking
Frost and top with sugar sprinkles or coconut
