CITRUS & BABY KALE SALAD - SIMPLY SUNDAYS
Winter in Northern California means delicious farm-to-table citrus! Fresh Navel oranges and grapefruits are plentiful, making it the perfect time to include them with locally grown candied nuts in green salads. I love pairing them with baby kale, pickled red onions, dried cranberries, feta cheese with a fresh squeezed orange vinaigrette.
CITRUS & BABY KALE SALAD
Oranges & grapefruit, cut into chunks
Pickled red onions
1 red onion, thinly sliced
1/2 c red wine vinegar
1/2 t salt
1 t sugar
Mix together and refrigerate before serving for at least a half an hour.
Fresh Squeezed Orange Vinaigrette
2/3 c fresh squeezed orange juice
1/3 c rice wine vinegar
1/3 c olive oil
1 T orange zest, finally grated
2 T granulated sugar
1 t Dijon Mustard
Mix together and drizzle over salad as desired.
