CREAM CHEESE RASPBERRY COFFEE CAKE & SPRING TABLE SETTING
No doubt about it, spring has arrived in the foothills of Northern California; the trees are graced with fresh new leaves, and the rolling hills are covered with green grass and wildflowers. It’s absolutely gorgerous!
SPRING TIME ENTERTAINING
Spring brings with it lot’s of opportunities for hosting and celebrating, starting with Easter and moving through Mother’s Day.
FAVORITE SPRING RECIPE
A few weeks ago I posted a sugar cookie recipe and shared how it was from a collection of favorite recipes - a cookbook that was complied many years ago as a token of love and friendship. Today I'm sharing another favorite from the same collection - a recipe for Cream Cheese Raspberry Coffee Cake, that is a beauiful as it is delicious. Take a look, and enjoy the yummy-looking cheese cake along with the beautiful fresh floral arrangements and table setting!
RASPBERRY CREAM CHEESE COFFEE CAKE
Heat oven to 350 degrees. Grease and floor the bottoms and sides of a 12" spring-form pan.
In a large bowl combine the following ingredients. With a pastry blender, cut in the butter until it resembles coarse crumbs. Set aside 1 cup of the mixture. With the remaining flour, butter and sugar mixture, add:
2 1/4 cups flour
1 cup sugar
1 cup butter
With the remaining flour, butter and sugar mixture, add the following:
1/2 teaspoon baking powder
1/2 teaspoon baking soda
3/4 cup sour cream
1/2 t salt
1 egg, blended using a fork or small whisk
1 teaspoon vanila
Blend well then spread batter evenly over the bottom of the spring-form pan; push the batter approximately two inches up the sides of the pan. Set aside.
In a small bowl combine the following using a blender:
8 oz package of cream cheese, softened
Spoon the cream cheese mixture evenly on top of the batter, while spreading it only in the middle.
1 1/4 cups raspberry preserves, from a jar
On top of the cream cheese mixture, carefully spread the raspberry preserves evenly on top of the cream cheese.
Finally, top the raspberry layer with the remaining, flour, sugar and butter crumble. Bake between 45-55 minutes, or until cook through and top is golden.
THE TAKE AWAY
- Invest in a few colored dishes to mix in with your clear and solid pieces to set just the right mood for your table settings. At first thought it might seem like pink and green dishes may not transition well to other table setting besides spring time but they are actually very transitional. Take for instance the pink glasses you see here, I've used them for my Christmas table and Valentine's table and have plans to use them again, and again even going into the fall holidays. So much of it depends what you pair with them.
